Even a little pinch of Vandevi Hing packs a punch. Hing refers to Asafoetida, a dried latex exuded from the rhizomeof a perennial herb called Ferula. It is extensively used in Indian cuisine to add a very specific flavour that cannot be imitated by any other spice. The substance itself has a pungent smell but don’t let it fool you. You need to heat it in hot oil before adding it to your curry to balance the sweetness or the sourness. Vandevi Hing is mostly used in vegetarian dishes but Kashmiris use it in their lamb Rogan Josh as well.
